I try to eat a lemon every day in one form or another. My favorite: lemon juice mixed into a good guacamole. As a child, I was lucky to live around lemon and avocado trees. My dad lived right in front of a lemon packing plant (yes, of course...Southern California). So here's to Big Yellow. Delicious. Nutritious. This picture of our Meyer lemon tree was taken in early fall. It's the second cold season for Big Yellow...and I have my fingers crossed. If you can find beautiful beets with the tops intact, cut the tops off about one inch from the beets, rinse well, and then chop the red stalks in small pieces. Cut the leafy parts in larger pieces, but keep separate. In a small saucepan, "steam" the stalks for five minutes in a little bit of water. Then add the leafy parts and steam for about 3 minutes more. That's it! Place in a bowl (drain if you have too much water) and put any dressing you like on the beet greens/reds. I used a pomegranate balsamic vinaigrette. Just three beets for two people... You could also cook and shred the beets themselves if you want to add to this dish. Cooking the beets themselves will take much longer. (If frozen, allow thawing in cold water first, then drain and pat dry.) Finely chop 6 cloves of garlic, let rest about 5 minutes to develop nutrients.
-----------
Saute shrimp in large pan with olive oil, add 2 tablespoons of crushed dried tomatoes and green and red chiles. Add 1 and 1/2 tablespoons S&B Oriental Curry, garlic, a handful of chopped green onions, 1/2 cup chicken broth, (more later if needed) 1 tblsp lemon juice. Saute until shrimp is done, and dried tomatoes and chiles are rehydrated. (5-7 minutes) If you like, you could rehydrate chiles and tomatoes in a bowl with a little chicken broth first before using.
-----------
NOTE: The dried red/green peppers and tomatoes: these were from our garden, sliced or chopped when freshly picked, then put in a dehydrator. After they were completely dried, put in sealed baggies in the freezer. The chiles we dried were a combination of red and green jalapenos, poblanos, and anaheims. If you don't have these, use fresh, but you might need more. The flavor of the dried is intense. (In fact we often use these crisp, dried tomatoes as chips for dipping with hummus, etc. We always store them in the freezer.)
------------
Serve over warm noodles or rice.

Chocolate Cosmos Wedding Cake

This beautiful wedding cake was crafted by my pastry-chef son Blake for his sister's wedding.
