Lana's Carrot Salad

Wash, clean, peel and shred carrots (we usually do a whole bag of carrots and shred them in a food processor, you don't have to use them all at once, they keep well without dressing in refrigerator) Put as much shredded carrots as you would like in a bowl, add broken/cut walnuts, raisins and/or dried cranberries, and press some fresh garlic and mix with mayonnaise or Vegenaise and olive oil. Let it sit a little for flavors to mix and enjoy!
